Why is it so hard to write? I have tons of ideas that I often jot down on a piece of paper and am motivated to start typing away, but then when I get behind my laptop I am encountered with writer’s block. I’ve been working on this post for the last month, as you can tell from my absence, and all I want to do is share with you my joy of cooking, this simple recipe I found and the fun and crazy month I’ve been having.

This past month has been non-stop. I kid not and I want to share my adventures with you. So, I’ll keep it nice and simple with pictures that speak for itself:

I’ve been on the volleyball courts learning how it feels to be a champion (that’s me in the pink making the kill at the 43 sec mark).

Sitting behind my desk and number crunching like a quasi-mathematician (can’t forget the yogurt with homemade jam and a mug filled with coffee).

Training and then killing eight-miles at the Super Spartan Race conquering 22-plus obstacles, bloody knees all the while getting well acquainted with my physical and mental strength with my “Freakishly Amazing” Spartan Girls! And, after the race:

Hanging out with Jason and friends for a good dose of laughter.

And, I discovered this delicious and simple recipe, Baked Flounder with Tomatoes and Basil from Bon Appetit’s September 2011 issue. Just make it and you’ll fall in love with simplicity, the sweetness of roasted tomatoes and how the flaky flounder perfectly agrees with your palate. It’s a recipe that I have tucked away in my recipe box for future dinners that require no fuss, no headaches and only fish, tomatoes, olive oil, garlic and a hot oven.

When I look back at these moments and it just brings warmth to my heart because I created these moments with friends that will last a lifetime. Just like this recipe will be made over and over again because I discovered, tried, tasted and loved.

A few notes: The recipe states that it serves 4, well Jason and I eaters so, it was perfect for two very hungry people. And the only thing I didn’t do was core my tomatoes. Other than that – I followed the recipe exactly and I wouldn’t mess with it one bit.
