Jet lagged and all from my Vietnam trip, tomorrow, I will be slaving cooking away at the crack of dawn. This will be my first Thanksgiving in New York City, hosting 11 people, counting myself. How will they all fit? That mystery that will be solved when we cram elbow to elbow at the dinner table. Hopefully, our sweet Porter will locate another table so, we can eat like Jesus at the Last Supper.

This Thanksgiving will be a very “thankful” and “local” feast but the chef (me!) is a bit overwhelmed by the lack of preparation and time. I blame it on my vacation. But, I’m quite optimistic my one Wild Heritage Turkey, one smoked ham and multiple side dishes will be ready by the 4 p.m. goal.

I know a lot of you are prepping right now, as I type up this post. Lucky. Lucky.

So, for those who need inspiration or are in charge of a side dish or two and you are a procrastinator like, me — here’s what I’ll be whipping up for my Thanksgiving feast tomorrow with a little help from friends.

The Thanksgiving Feast

Appetizers (provided by guests)
A couple hundred grams of finest sustainably raised Uruguayan caviar (thank you, Jeff!)
A variety of cheeses and crackers

Drinks (provided by guests and me):
Magnum of champagne, some Pinot Noir from Burgundy and Alsace, Riesling, Beaujolais and more wine!

The “local” Feast:

Roast Heritage Turkey. The wild Heritage Turkey from Quattro Game & Poultry Farms.
Smoked Ham from Flying Pigs Farm
Pancetta Brussels Sprouts
Sauteed Green Beans
Mashed Garlic Potatoes
Candied Sweet Potatoes (my mom made this every Thanksgiving but we modified it and always added marshmallows which I’ll be doing)
Marilyn Monroe’s Stuffing (call me crazy, but this should be interesting)
Spiced Cranberry Sauce
Salad (provided by guest)
Gravy – this will be made from the turkey drippings (I am going to just do this from scratch and on the spot).

Sweet Endings:
Pies (provided by guest). My favorite is always “pecan pie” so, I hope she brings it. But who doesn’t love pumpkin pie too! I’ll eat it all.

I think that’s everything…. Oh wait — I still have to purchase a roasting pan, table cloth and make sure I don’t pass out at the dinner table.

A very Happy Thanksgiving to each and everyone of you! And, remember to give your “thanks”.
